Well, I survived Jump Start (the summer literacy lab I took part in the past two weeks), and I’m now in crazy back-to-school mode. I spent about six hours both Saturday and Sunday up in my classroom–sorting books, putting up bulletin boards, organizing supplies, etc. There is so much to do to get a classroom ready, and the lesson-planning, grading, student-work hasn’t even begun. This week, we’ll have lots of meetings and planning time. Friday night is Back-to-School Night (when the kids can drop off their supplies and meet their teacher), then next Monday the 12th school officially begins. (Nothing like jumping right into a full week!)
Needless to say, I won’t be preparing any elaborate meals this week. So, I sent B to Trader Joe’s yesterday with instructions to buy a few of our fast favorites. Here’s what we’ll be having this week…
- Trader Joe’s Multigrain Blend w/added black beans – Yes, we had this last week, too, and yes, it is a staple in our household! I love that you can spice it up with different flavors, proteins, etc.
- Trader Joe’s Roasted Chicken Patties – Warm ‘em up and dip ‘em in some BBQ sauce; throw some sort of veggie on the side. Easy and delicious!
- Trader Joe’s BBQ Teriyaki Chicken – Heat it in the microwave; add some sauce; cook some brown rice on the side.
- Turkey Sloppy Joes – I didn’t end up making them last week, so I just threw the ground turkey in the freezer. We’ll see how I’m ambition I’m feeling this week.
