So, I totally stink at taking pictures of everything I eat in a day. I’ve tried. Many, many times. But I always forget something. Which has led to many, many skipped What I Ate Wednesdays. So, today, for my participation in Peas and Crayons’ meme, I will be putting some of these photos to use. Here is What I’ve Been Eating: Breakfast Edition.
Breakfast
Apple Pie Egg White Oatmeal
1/2 C oats
1 C water
1/2 C egg whites
1 apple
dash of apple pie spice
sugar-free syrup
Cook the oatmeal with just the water in the microwave for 1:30. Then, stir in the egg whites and cook for an add’l 2:30 or so. Slice the apple and cut into pieces, sprinkle with apple pie spice. Cook the apple separately in the microwave for 1:30 or so (I just throw it in with the cooking oatmeal because my microwave is big enough). Stir cooked apple into cooked egg white oatmeal. Top with sugar-free syrup (optional, but delicious!).
Green Cake Batter Smoothie
based off of this recipe by Stuft Mama
1 frozen banana
2 scoops vanilla protein powder
1/3 C Greek yogurt
1 C milk of choice
1 handful spinach
1 sprinkle of sugar-free vanilla pudding powder
1 splash butter extract
1 splash vanilla extract
1 sprinkle of sweetener
handful or two of ice
based off this recipe, but drop blueberries into the pancakes as they’re cooking
Still one of my all-time favorites. You can find the recipe here. But I also add a handful of spinach most days.
Cinnamon Toast Pita Pastries
Trader Joe’s mini whole wheat pitas
sweetener
cinnamon
butter
Mix up some sweetener and cinnamon. Spread a little butter on your pitas. Roll the pitas in the cinnamon mixture. Pop into the toaster oven for a minute or two. The result will be a warm, sweet, pastry-like treat. Yum!

Look at those healthy eats! So I’ve seen cake batter flavors a lot recently- would you say the butter extract is what makes it cake batter flavored? I’m trying to jump on board the dessert flavored health foods
Yes, the butter flavor helps. Also, the sugar free pudding mix helps. Then you just need a little bit of imagination
